Mediterranean Quinoa Salad

Ingredients

  • - ## meatball
  • - 1 cup quinoa, rinsed
  • - 2 cups water
  • - 1 cup cherry tomatoes, halved
  • - 1 cucumber, diced
  • - 1 bell pepper, diced
  • - 1/4 cup red onion, finely chopped
  • - 1/2 cup Kalamata olives, pitted and sliced

Instructions

  1. 1In a medium saucepan, combine quinoa and water, bringing to a boil over medium heat. Reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and water is absorbed.
  2. 2In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, olives, feta cheese, and parsley.
